nutrient-packed nachos

We all know nachos are delicious, but did you know that they can also be nutritious?

One of the most common misconceptions I come across as a coach is that a diet needs to be ‘boring’ in order to be successful. However, this is simply NOT the case.

Regardless of your goals, your diet should never be boring or unenjoyable.

In fact, your meals should excite you!

Excitement = Enjoyment.
Enjoyment = longevity.
Longevity = results.

And because we all want excitement, enjoyment and results, I’m sharing one of my FAV recipes from the Glow Active Nutrition Ebook.

BEEF NACHOS (one serving)

INGREDIENTS
♥ 125g extra lean beef
♥ 35g tinned Edgell black beans
♥ 4g garlic
♥ 3g taco spice mix
♥ 40g avocado

♥ 50g Woolworths original tortilla strips
♥ 20g Woolworths light shredded tasty cheese
♥ 40g Woolworths chunky salsa
♥ 20g white onion
♥ 10g spring onion

METHOD
♥ Add onion to the frying pan and cook until translucent
♥ Add garlic and beef mince and cook until the meat is browned
♥ Once browned, add taco spice mix and tinned black beans
♥ Once beans are softened, remove the pan from head
♥ Place tortilla strips in an oven proof bowl/tray and top with beef mince and black bean mixture
♥ Add cheese and place in the oven on 180 for 5-10 minutes, or until cheese is melted
♥ Serve with avocado, tomato salsa and spring onion
* OPTIONAL: to add more density to the meal, cook with extra virgin olive oil and top with sour cream.
